Peanut Butter Banana Oatmeal Bars



Happy Wednesday ya'll! I hope you have had a great week so far. If not, well tomorrow is another day. For the past week we have been taking a break from school and blogging. I have kept reading a mandatory, daily deal. Monday the kids will return to our daily routine and get back to it. 

My kids have kept busy and enjoyed themselves a lot. One thing they love to do is bake. It doesn't matter what time of day or what season it is. Of course it is always sugary sweets lol. I have found many recipes on Pinterest that I want to try. One in particular is something healthy....peanut butter banana oatmeal bars. What a mouthful right? These are vegetarian and Gluten free! 


This recipe is originally by SkinnyMom.com. I follow them on Pinterest and Facebook. They have a lot of great healthy recipes. The main reason I chose oatmeal bars was because of my husband. He rarely has time for breakfast and I am not a morning person. So now he just grabs and go and I feel that I have done my wifely duties Lol :) SO, check out the recipe below....and of course some pictures of the process.


Peanut Butter Banana Oatmeal Bars
Ingredients
  • 2½ cups instant oatmeal or old fashion oats
  • ⅓ cup light or dark brown sugar
  • 1 tsp baking powder
  • 2 tsp cocoa powder
  • ¼ tsp salt
  • 1 tsp vanilla
  • ½ cup Silk® unsweetened vanilla almond milk
  • 1 egg
  • 3 medium very ripe bananas, mashed
  • ¼ cup natural peanut butter
  • ⅓ cup dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Prepare an 8x8” pan or cookie bar pan with cooking spray and set aside.
  2. In a medium size bowl, mix together oats, brown sugar, baking powder, cocoa powder and salt.
  3. Next, add in vanilla extract, unsweetened almond milk and the egg. Stir in mashed bananas and peanut butter. Mix well.
  4. Finally, fold in dark chocolate chips and mix gently.
  5. Transfer mixture into baking pan.
  6. Bake for 15-20 minutes. Remove from oven and allow bars to cool before serving

Adding Dry ingredients

Mashing bananas and adding peanut butter

Mixing wet with dry ingredients followed by chocolate chips.

Place in baking sheet or any type baking pan and bake,

20 minutes and done! Not much left here lol.
